5 Cups Oyster Mushrooms, chopped
1 1/2 Cups Chicken Stock
1 1/2 Cups Beef Stock
2 Tbsp Butter
1 Tbsp Olive Oil
1 medium Onion or Shallot, finely chopped
1 clove Garlic, chopped
Salt and Black Pepper
1 Tsp Thyme, dried
Dash of Sherry
3/4 Cup Milk (optional)
Directions
- Lightly Saute onions in butter and oil, add garlic and set aside.
- In stock pot add most of the broth, reserving 1/2 cup. Add 1/2 of the mushrooms, sherry, and seasonings. Simmer on low until mushrooms are soft and tender.
- With remaining 1/2 cup broth and the rest of the mushrooms, blend in food processor till smooth.
- When mushrooms in broth are tender add blended mushrooms to the pot. If desired milk or cream can be added for extra richness.
- Serve Hot.
